"Naolinco is a large district in Veracruz, Mexico, situated between 1200 and 1600 meters above sea level. It consists of small towns, each with about 30 to 50 residents. To reach Naolinco, travelers fly into the Veracruz airport in Xalapa, then drive for an hour along a well-maintained, winding road. This route becomes more difficult during heavy rain.
Farms in Naolinco typically range from 1 to 2 hectares per producer. Coffee has always played a central role in local agriculture, alongside livestock and corn. Most producers live about 30 to 40 minutes from the center of Naolinco.
Locals often refer to Naolinco as one of the most beautiful districts in Veracruz. The area is also known across Mexico for its high-quality leather clothing and shoes.
Producers commonly use the leguminous ice cream bean tree as the main shade tree and companion plant. For fertilizer, they apply Yara (a commercially available fertilizer) either on its own or combined with organic alternatives.
As is standard throughout Veracruz, producers harvest coffee in cherry. They then transport it about four hours to the central processing plant in Coatepec. Most farms in Naolinco have road access, allowing producers to use cars or trucks rather than mules.
At the processing plant, workers wash the cherry using spring water, ferment it for 48 hours in concrete tanks, and dry it mechanically for 60 hours."
