Story Of The Bean:
This coffee is the fruit of a three year relationship between our importing partners and Mexico. Since 2021, they have been discovering and sourcing delicious offerings from Oaxaca, Chiapas and Puebla. And this is their third year buying in the Ozolotepeques. In 2021, these coffees were some of the most impressive so they decided to double down and buy as much as was offered. The quality has been high, however, the community of producers there suffered set backs when the area was significantly impacted by Hurricane Agatha, which tore through southern Oaxaca in late May '22.
How It's Made:
Varietals: Pluma Hidalgo, Typica, Bourbon
Processing: Fermented for 20-24hrs, washed, dried for 8-12 days
